Pine Nuts: A Nutritious Treat!

I was in the mountains this past week and had the opportunity to watch flocks of wild turkeys feasting on pine nuts. Pine nuts, also known as piñón or pignoli, are small seeds harvested from pine trees. These buttery, nutrient-dense morsels offer fantastic nutritional benefits for modern diets.
Pine nuts grow inside the cones of pine trees and can take up to 18 months to mature. The process to harvest pine nuts for human consumption is labor-intensive. Once the pine cones ripen, they are collected by hand or gently shaken from the trees. After drying in the sun for several weeks, the cones open naturally, releasing the seeds inside. Each cone yields only a handful of nuts, and each nut must still be removed from its hard shell before it’s ready to eat.
